Pan Roasted Salmon Mediterranean Bowls with Tahini Sauce

SONY DSCOh for all things yum.  If you’re looking for a warm, yet light, fresh weeknight meal idea look no further, friends.  These bowls right here are the whole shebang.

Let’s start with the tahini sauce.  If you have even the slightest relationship with hummus this stuff will knock your socks off.  I eat it on everything.  I mean everything.  From green salad dressing to veggie dip to burger topping to sweet potato fry dunking.  Tart and garlicky and creamy and oh my golly I just can’t get enough.   Continue reading

Baba Ghanouj | Eggplant Dip

SONY DSCWeekend warriors!  It’s Saturday!  What’s the good word?

We have a whole lot of nothing planned this weekend and I just couldn’t be more thrilled about it.  The weather here in MN is feeling a bit crisp and fall like-so as you can imagine, I intend on a cozy cup of coffee this morning with my husband who is [finally] back in town and a couple of kids running around in jammies until we decide what random Saturday adventure we would like to partake in.  Man, my kind of day.   Continue reading

Grilled Chicken Mediterranean Bowls

SONY DSC

Summer is officially halfway over you guys.  Each year around this time I seem to begin easing into fall mindset; it’s a  point of bittersweetness thinking about what’s shortly ahead.

School.  Structure.  Less daylight.  Earlier bedtimes.  More responsibility.  And quite honestly, each time around this year, that all tends to sound slightly appealing to me.  As much as I adore our summers here in MN, the fall brings so much wonderful newness.  The scenery is impeccable.  The crisp air and lack of mosquitos are like a dream.  The kids getting into a new routine and their utter excitement about school is so uplifting.  And schedules…you know I love a solid, predictable schedule 😉

But before all of that comes, while things are still warm and sticky and loosey-goosey, please, please, I beg you, do me a favor?  Celebrate these last days of summer in your kitchen and make this dish.  It’s sheer delight; summer at its very very very finest.  And if you have even the slightest love for Mediterranean flavor, this is absolutely for you. Weeknight Gyro Bowls

SONY DSC

Have we shared gyro love stories in the past?  I don’t recall.  But if you are reading this I have a good feeling our taste buds are a match made in heaven…and if that is, in fact, the case, there’s a good chance you have a slight adoration for the gyro sandwich.  Our favorite in our neighborhood comes from this joint.  Yes, my friends, you will arrive at a  gas station.  And you will walk right past the gas pumps and in through those old, worn doors into a convenience store that has a few shotty tables sprinkled in among a a sparse inventory of mediterranean groceries and a kitchen that pumps out some of the best gyros around.  Its a hole-in-the-wall.  A gem.  And our go-to for a majority of the times we eat out with the kids.  It’s my kind of spot, without a doubt.

I don’t make gyros at home because I just can’t compete with theirs.  But this recipe for Weeknight Gyro Bowls gives me the same flavors right in the comfort of my own kitchen.  Aside from the fact that they taste top notch…they’re so very healthful and fast to make.  You’ll get them on the table in way less than 30 minutes, start to finish. Mediterranean Chopped Salad

Image

If you were looking for us on Saturday, you would have found us sitting on the deck at some of our nearest and dearest’s house…kids playing, adults baby-gushing, wine in hands and the darling hosts feeding us some of the best guacamole on the planet and an awesome burger bar, to boot.  Pretty sure it doesn’t get much better than that.  This salad was my dish to share and it received pretty darn great reviews.
