You guys, this weather we are having around here!  It’s COLD!  Gorgeous, but man does that change in temp feel like a chill or what?  It’s pretty much the best kind of weather.  You know, the kind of weather where it’s not too cold to sleep with your windows open…but them when you wake up in the morning you can’t possibly seem to peel yourself out of those perfectly warm, cozy covers because your room has an insane chill going through it.

We have been comfort-fooding around here like crazy people lately.  It must be the weather.  And these Quick-Chili Loaded Baked Potatoes made the roster.  I feel like I say this a lot, mostly because I only tend to share the recipes that get my family’s stamp of approval, but these are definitely a favorite among the kiddos. Gooey Chocolate Zucchini Bread

Guys, I write to you with reservation.  This is not how this was supposed to go.  We weren’t supposed to end our zucchini week this way.  I had big dreams.  High hopes.  Goodbyes are difficult…zucchini goodbyes, well, they deserve more than a confidence-lacking post.

You see, I was kind of saving the best for last here with this bread.  I made it last week…it was incredible…but I didn’t take photos.  Figured I’d make it again this week because my kids acted like famished wolves when I made the last batch…it would be a perfect opportunity for me to get some photos for you. Perfectly Healthful Blueberry Banana Muffins

So these have sort of become a weekend breakfast staple for us.  They are quick and easy to put together and the leftovers freeze wonderfully for quick breakfasts later on in the week.

They are healthful and full of nutrients without refined sugars and flours which makes me pretty darn happy…and pretty darn ok with the fact that my kids always want seconds. Continue reading

Autumn Bark

Happy Halloween Week!  It’s funny, I was never really a fan of this upcoming holiday until my kids came along.  But now, for me, it’s basically pure excitement.  It’s a fun excuse to dress my kids in hilarious outfits (please, just pray Jude allows me to put his costume on him for at least one photo.  one, thats the goal this year, just one little itty bitty photo is all i ask for.  pray friends, pray.)  Not to mention this holiday is perfectly placed among the most GORGEOUS time of year.  Crispy Autumn.  Ahh.

So on top of the costume thing and the beautiful time of year thing I’m pretty sure most of my excitement stems from the fact that it’s a perfectly wonderful opportunity to get fun and creative in the kitchen.  Holidays equal special food.  Always.  Continue reading
