Baby Food: Savory Lentil and Veggie Purée 


Ok mamas, papas and caregivers…can we talk baby food super briefly?

Man am I learning that sometimes you just have to bite the bullet and go the store bought food route which I’m totally ok with..I love all of the healthful options they make these days and it’s so convenient. But here’s my beef…why do these companies feel the need to make everything taste sweet?! Even if those jars have spinach, green beans or peas in them they often times still wind up putting pears or apples in the bulk of the ingredients. I love that my baby is getting veggies “snuck in” to these varieties because of the nutrients. But I also want him to taste savory…and learn how delicious veggies can be in savory form. Apple Cinnamon Pastries


It’s starting to officially feel like fall, guys! How have you been celebrating? Give me all the warm coffee, crunchy leaves, cool, refreshing air, pumpkins, corn mazes, scenic colors that will blow your mind…and APPLES! It’s all happening in our neck of the woods and if I could just pile on an extra couple months of this stuff I’d be one over-the-moon mama. Minnesota truly feels like the most magical place this time of year.

We had our annual apple orchard trip a couple weeks ago and, well, if you know me you know that it’s my very favorite family outing of the year. Being stuck in the middle of nowhere surrounded by the most incredible scenery with my four favorite humans just simply isn’t a terrible way to spend a Saturday. Quick Grilled Fish + Pineapple Tacos with Chipotle Sour Cream

While the chipotle sour cream is such a cinch to make, preparing it over the weekend can make this meal so weeknight friendly with hardly any prep at all. Waverunner Chicken with Citrus Salsa and Coconut Brown Rice

SONY DSCI don’t even know where to begin, you guys.  I made this dish a while back and I am literally about ready to jump through the screen in an attempt to devour these photos because I want to eat this again immediately.  Incredible.  Just incredible.

Now let’s just start from the beginning, okay?  Urban Halo…yes?  No?  If you haven’t…you are welcome for the introduction, and I apologize for your addiction all at the same time.  I’ve been a fan of this company and their headbands for a solid couple of years and for so many valid reasons…it’s local, started by a fellow mama like myself who was looking to create the most stylish, functional headbands on the planet and I’m pretty sure she has accomplished her mission.  These are my gym bff (and they don’t slip!!!)..and they are cute and comfy enough to keep on all day long after my workout.  Also, pretty much my saving grace on those rush-out-the-door mornings with no time to do my hair.  Not to mention Georgia is also obsessed..and man do they look cute on a silly little five year old, too.  So fun to share my stash with her! Blackened Steak Lettuce Wraps with Chipotle Lime Sour Cream

SONY DSCYou guys, the weather around here has been straight up INSANE…and I mean that in the best way possible!  It’s February.  And we have gone to the park nearly every day for the last week, no joke.  Almost every bit of the snow is melted, the sun has been working overtime and there are literally birds chirping.  Can I get allllll the virtual high fives and happy dances from you!?  So let’s  celebrate this spring-like feeling by eating spring-like…at least until we get hit with that snow storm thats in the forecast for this week. Only in Minnesota, my dear friends.  The land that I love 😉

Roasted Cabbage Ruben Stacks

Now what in the heck was I supposed to call these things, you guys?  They are the most random twist on one of my all-time favorite sandwiches and this name was all that my tired, pregnant brain could come up with.  If you can come up with a better one, please do share.

One Pan Lebanese Chicken + Lentil Pilaf

SONY DSCI have been hardcore craving Lebanese food.  And I’m not talking just a yummy shawarma I can get from a local food truck.  I want the real deal…mamas cooking, preferably.  The authentic flavors, the comfort, all of it.  So I did a little playing around in my kitchen this past week and man have I seen the light!

This One Pan Lebanese Chicken and Lentil Pilaf is not a traditional Lebanese dish.  It is a lazy-cooks version of a couple of dishes combined and can I just say that it’s the best lazy-move I may have ever made in the kitchen?  The most tender, flavorful chicken paired with a savory lentil pilaf is a match made in heaven.  Continue reading
