Perfectly Healthful Blueberry Banana Muffins

SONY DSC

So these have sort of become a weekend breakfast staple for us.  They are quick and easy to put together and the leftovers freeze wonderfully for quick breakfasts later on in the week.

They are healthful and full of nutrients without refined sugars and flours which makes me pretty darn happy…and pretty darn ok with the fact that my kids always want seconds. Continue reading

So I’ve got this thing for these one pot pasta deals that have been floating around the internet over the last couple of years.  Remember this one?  Well, I haven’t stopped experimenting. Continue reading

Southwest Chorizo and Bean Soup

SONY DSC

Well, my guess is, by now,  you have gathered that soups are kind of my thing.  We just click well, for so many reasons.

I love to make them as I go, adding this, that or whatever is left sitting in my fridge or pantry-it’s like piecing together a flavor puzzle; the pieces being whats available in your kitchen.  It teaches me so many dynamics about true cooking. What pairs well together, which flavors and textures don’t mesh.  Soups and stews tend to be my best learned lessons-and provide me my most creative time in the kitchen, which I love. Shrimp and Cauliflower Grits

SONY DSC

I sit here with the intent of being a good friend.   I really do.  I want to know how your holidays were.  I want to know about your resolutions.  The wonderful things you ate.  How much you {hopefully} enjoyed a little time off.  I do.  But I can’t.

I can’t possibly sit here with this little gem dangling over my head and write, even think, about anything else.  This gem I write of is called Shrimp and Cauliflower ‘Grits’ you guys.  And I have got to get over it.  It’s becoming a problem.

Let’s just get right down to it.   Continue reading

Chocolate Peppermint Crunch Clusters

SONY DSC

These are a real thing, you guys.  They happened in my kitchen just yesterday.  I saw them with my own two eyes.  I tasted them with my very own tastebuds.  I shared them with a few small grateful children and a couple friends.  And now, they are gone.  Today, no more.  So I’ll be making another batch just as soon as I get this recipe into your hands.   Continue reading

Slow Cooker Beef and Bean Chili

SONY DSC

My husband was craving chili big time last week.  And chili is one of those weird things I have a hard time making on any day of the week other than Sunday.  It’s a Sunday food, no?  It needs time to simmer on the stove and smell the house up beautifully while everyone gets cozy and football is blaring in the background.

But last week on Sunday I had an event to attend.  Which meant no time to let that chili bask in its glory on the stove.  So I decided to try a stab at it in the slow cooker. Results?  Delicious.  So simple.  And perfect for days where time has got the best of you. Continue reading

Asian Steak and Cabbage Bowl

SONY DSC

So, how was it?  Did you go crazy for your kids halloween candy?  My husband did.  I had no part in it.  Except for the DOTS.  And peanut butter cups.  I may have had a Snickers, too.  Or two.

This weekend basically consisted of lots of junk food…pizza, burgers and fries, way too much candy..and not enough sleep.  So, back we are to reality and it feels so very good to have meals at home, sleep schedules for the kids and real-life food in the fridge.  It doesn’t take much for me.  If I’ve got those three things I am ONE HAPPY CAMPER. Slow Cooker Chicken and Poblano Stew

SONY DSC

Slow Cookers.  They can be such a time and sanity saver.  But, as you know, I’m really finicky about what I put in them-I believe it’s my controlling food nature.  When I put something in the slow cooker I’ve lost control.  There’s no seasoning as you go, there’s no stirring, there’s no adding this or that.  It’s a hands off,  no-control zone for me.  So recipes I put in mine have to be precise…and special…and worthy.  This ones there.   Continue reading

Weeknight Roasted Chicken and Vegetables

SONY DSC

So there’s Sunday’s Finest Roasted Chicken; all dressed up, fancy “tie” and all.  Stuffed and seasoned and as delicious as can be.  At least I thought.  But then my laziness set in and I wanted Sundays Finest Roasted Chicken on a weeknight.  Without all of the hassle of stuffing and tying and fussing.   Continue reading
