Slow Cookers. They can be such a time and sanity saver. But, as you know, I’m really finicky about what I put in them-I believe it’s my controlling food nature. When I put something in the slow cooker I’ve lost control. There’s no seasoning as you go, there’s no stirring, there’s no adding this or that. It’s a hands off, no-control zone for me. So recipes I put in mine have to be precise…and special…and worthy. This ones there. Continue reading

Weeknight Roasted Chicken and Vegetables
So there’s Sunday’s Finest Roasted Chicken; all dressed up, fancy “tie” and all. Stuffed and seasoned and as delicious as can be. At least I thought. But then my laziness set in and I wanted Sundays Finest Roasted Chicken on a weeknight. Without all of the hassle of stuffing and tying and fussing. Continue reading
Perfect Chicken Tortilla Soup
An oldie but oh-so-goodie favorite soup recipe of mine was published today on Twin Cities Moms Blog, friends. It’s one of those staple recipes I continue to go back to over and over-so so SO yum. Continue reading

Grilled Asian Sesame Chicken Thighs
Chicken thighs tend to get shoved in a corner and for no good reason at all. They are total gems of the chicken world, in my opinion. They don’t dry out like white meat. Chicken, Black Bean and Avocado Eggrolls
Serve them as an appetizer, snack or dinner. Quite honestly, Id choose seconds instead of dessert any day of the week. The chopped avocado inside of the egg roll is the most awesome surprise…and of course, all of its co-stars get my props, too. Continue reading
Chicken Sausage and Summer Corn Chowder
As you know, I’m crazy for summer soups and chowders..remember this one? Grilling tends to be my go-to this time of year but I love to switch it up with a fresh bowl of light comfort. This soup falls nothing short of that. It’s a great way to utilize all of the beautiful sweet corn and veggies that are starting to show up at the farm stands. Continue reading

Asian Chicken Meatball Salad
This weather screams salads to me. As you know, I’ve got a slight obsession with Asian Banh Mi Sandwiches like this one. Flavor and texture that will knock your socks off…they are a perfect package, in my opinion. But I wanted a way to enjoy them in salad form. Something lighter but that would still give me every ounce of that sweet, savory, salty taste. This salad? Done. Devoured. Amazing, signed, sealed and delivered. Continue reading
Grilled Chicken Fajitas
In honor of Cinco De Mayo I find it only necessary to share with you one of our very favorite “Mexican” recipes. Grilled Chicken Fajitas.
Your belly will think they are as beautiful as your eyes do, friends. Smokey, charred, savory chicken loaded with herbs and spices paired with slightly crisp peppers and onions equal magic on my tastebuds. Continue reading
