SONY DSCI don’t even know where to begin, you guys.  I made this dish a while back and I am literally about ready to jump through the screen in an attempt to devour these photos because I want to eat this again immediately.  Incredible.  Just incredible.

Now let’s just start from the beginning, okay?  Urban Halo…yes?  No?  If you haven’t…you are welcome for the introduction, and I apologize for your addiction all at the same time.  I’ve been a fan of this company and their headbands for a solid couple of years and for so many valid reasons…it’s local, started by a fellow mama like myself who was looking to create the most stylish, functional headbands on the planet and I’m pretty sure she has accomplished her mission.  These are my gym bff (and they don’t slip!!!)..and they are cute and comfy enough to keep on all day long after my workout.  Also, pretty much my saving grace on those rush-out-the-door mornings with no time to do my hair.  Not to mention Georgia is also obsessed..and man do they look cute on a silly little five year old, too.  So fun to share my stash with her! One Pan Lebanese Chicken + Lentil Pilaf

SONY DSCI have been hardcore craving Lebanese food.  And I’m not talking just a yummy shawarma I can get from a local food truck.  I want the real deal…mamas cooking, preferably.  The authentic flavors, the comfort, all of it.  So I did a little playing around in my kitchen this past week and man have I seen the light!

This One Pan Lebanese Chicken and Lentil Pilaf is not a traditional Lebanese dish.  It is a lazy-cooks version of a couple of dishes combined and can I just say that it’s the best lazy-move I may have ever made in the kitchen?  The most tender, flavorful chicken paired with a savory lentil pilaf is a match made in heaven.  Continue reading

Slow-Cooker Cream Cheese Chicken Enchilada Cups

SONY DSCHow much do you love appetizers?  Give them to me for every meal, friends.  There’s really nothing like trying a bunch of different small bites.  And with the Super Bowl coming up I think these little Enchilada Cups are going to come in pretty darn handy.

We made these just last night for dinner.  I wanted to come up with an appetizer recipe to share with you guys that would be just perfect for you to share with friends for Sunday’s big game.  I’m pretty sure I accomplished my goal…but turns out they make a pretty stellar dinner, too.  My kids devoured them and requested they be added to the “make-often-because-these-are-our-favorite” list, which is pretty much music to my ears.  And I would feel safe assuming Nick and I could win awards for our ability to consume large amounts of these as well; so stinking yummy! And soups are at the very top of my comfort food list these days. It’s December, after all-seems only appropriate.  As I’ve told you in the past, soups are one of my very favorite dishes to create because there are just no rules.  Soups are so forgiving.  Throw in what you’ve got in the fridge and with a few of the right aromatics, spices and garnishes you’re practically good to go.  This soup right here?  This Southwest Chicken, Bacon and Potato Soup?  You just must.   Continue reading

Pan Roasted Chicken Thighs with Chive Cream Sauce

img_6592Boy oh boy it’s been a while.  How was your long weekend?  As I told you last time we chatted, we took a little road trip to visit my family down in Iowa and Nebraska and I couldn’t have asked for a better way to close out the summer.  It was time so well spent…with my parents, my siblings and their families.  Late nights, early mornings, donuts, happy kiddo giggles, mama’s homecooking, pool parties, coffee, pedicures…I mean it was just plain wonderful.  And now…school begins!  What a way to head into a new year, hearts full as all get out.

And as you may know, somehow, magically, each year as summer begins to slip away my seasonal cooking-brain goes right with it.  It’s incredible how it happens so organically.  Suddenly I begin craving warm food….my tummy just begins to tire a bit of all of the cool, crisp, fresh fare.  So this dish right here is just a lovely way to begin the transition….it’s warm and comforting, yet still light and fresh.
