I don’t even know where to begin, you guys. I made this dish a while back and I am literally about ready to jump through the screen in an attempt to devour these photos because I want to eat this again immediately. Incredible. Just incredible.

I’ve been a fan of this company and their headbands for a solid couple of years and for so many valid reasons…it’s local, started by a fellow mama like myself who was looking to create the most stylish, functional headbands on the planet and I’m pretty sure she has accomplished her mission. These are my gym bff (and they don’t slip!!!)..and they are cute and comfy enough to keep on all day long after my workout. Also, pretty much my saving grace on those rush-out-the-door mornings with no time to do my hair. Oh Lordy. Meet my new best friend, you guys. And I’ve got one lousy photo to prove it…ugh, a food bloggers worst nightmare. I contemplated waiting to take more photos and post this recipe after the next time we have it but you know what? I don’t really think its a good idea for me to wait any longer than necessary to hand this one over to you. It’s a weeknight game changer and it tastes like a giant bowl of happiness.
I have been hardcore craving Lebanese food. And I’m not talking just a yummy shawarma I can get from a local food truck. I want the real deal…mamas cooking, preferably. The authentic flavors, the comfort, all of it. So I did a little playing around in my kitchen this past week and man have I seen the light!
How much do you love appetizers? Give them to me for every meal, friends. There’s really nothing like trying a bunch of different small bites. And with the Super Bowl coming up I think these little Enchilada Cups are going to come in pretty darn handy.
We’ve been loading up on soups, stews and comfort food like crazy people around here. This weather just lends itself to such deliciousness, don’t you think? But geez louise we must switch things up once in a blue moon! This salad-it’s just fantastic for this time of year. It’s still a bit comforting and warm but the flavors are so light and fresh…a combo after my own heart!
It won’t stop, you guys. All things comfort. All day. Every day. I’m not sure if its the damp, cold weather happening around here or the fact that theres a precious tiny little human growing inside of me but COMFORT FOOD, I will find you.
I mean is there really anything better than a warm bowl of homemade chicken noodle soup? If there is, this soup right here could be it. 
Boy oh boy it’s been a while. How was your long weekend? As I told you last time we chatted, we took a little road trip to visit my family down in Iowa and Nebraska and I couldn’t have asked for a better way to close out the summer. It was time so well spent…with my parents, my siblings and their families. Late nights, early mornings, donuts, happy kiddo giggles, mama’s homecooking, pool parties, coffee, pedicures…I mean it was just plain wonderful. And now…school begins! What a way to head into a new year, hearts full as all get out.
