Can you believe this weather??  THIS is why I chose Minnesota.  Can you please remind me of this in late January?  Its amazing outside and we’ve been taking full advantage of this very rare weather.  Parks, walks and trying to get in every ounce of grilling that we can while it lasts and these wings made the list.  To.  Die.  For.  And THESE are why my husband married me.  Can you please remind him of this next time I’m “nagging”?

Im sort of obsessed when it comes to buffalo wings, as many of you know.  I love them.  I mean, put wing sauce on anything and Im drop to the ground, head over heels smitten.  But put them on a grilled chicken wing?  That has crispy skin AND a chargrilled smokey flavor?  Good Lord, people. Simple Bleu Cheese Dressing

We are suckers for this stuff around our house.  It makes veggies perfectly dippable and salads ridiculously indulgent.  And if you ask me, its tough to find a store bought version that is worth eating…which isn’t such a bad thing because its a cinch to make at home with just a few simple ingredients.  And in my opinion, guilt free if you are using an olive oil based mayo.  This doesn’t last long in our fridge. Savory Beef Stew

Red wine has always been my go to for beef stew…it gives it such a rich flavor.  But as I was putting a pot of stew together this past Sunday I realized we were out of red wine.  And in good old Minnesota there are no liquor stores open on Sundays which left me no option but to try something new…and the only thing  I could come up with that had potential was balsamic vinegar.  Its rich and bold and so savory.  Ill never go back…peace out, red wine.  This is the real deal, right here.  Best beef stew I have ever made. Crispy Eggplant Fries with Spicy Yogurt Dipping Sauce

Like it or not…  I LOVE the way most fried food tastes.  I know, and Im sorry if i gross you out but come on, how do you not?  Fried pickles.  Cheese curds.  Onion rings.  Buffalo wings.  I will now wipe up the pool of drool on my keypad.  So sometimes I need this fix and I try and try in my own kitchen to figure out how to have it in a more healthful way.  These eggplant fries are seriously to die for…and they give me that fried food taste…minus being fried, the grease and icky feeling after eating them. Sprouted Grain Breadcrumbs

There is so much going on out there in the world of food and nutrition.  Our society has made some great progress when it comes to educating ourselves on what we are feeding our bodies.  The marketing companies have also become even smarter….they’ve got most of us wrapped around their fingers.  Whole grain, whole wheat, all natural, gluten free….the minute we see these words we often perk up and assume these things are healthy for us.  Wrong.  So very wrong.   And all of the diets.  The Atkins Diet.  The Low Carb Diet.  The Gluten Free Diet.  The Paleo Diet.  This challenge.  That challenge.  The Problem?  The word diet, unrealistic guidelines and the notion that a quick fix is on the way.  It strikes a cord with me.  People, because its human nature, commit to these “diets” and once they get off track for even a split second all hell breaks loose.  They either guilt themselves and deprive themselves or completely give up on their “diet” and regress or binge.  So if these diets work for you…I apologize.  You do what you do and I’ll do what I do. Cauliflower, Broccoli and Ham Gratin

If you’re down with cheesy, gooey, comforty goodness this ones for you.  Adult devoured and kid approved around here.  I like this recipe because of its simplicity…there are very few ingredients and it requires very little work.  The sauce and veggies cook together which makes clean up a breeze and the ham is precooked which saves crazy amounts of time.  And an extra thumbs up in my book because theres no cream of anything soup and no flour for thickening.  A wonderful dish to ring in the cool fall days ahead…was that the fastest summer ever, by the way?  Ill take fall any day of the week…bring. it. on.  apples…pumpkins…stews…gratins…oh my!!
