Honey Mustard Chicken Thighs

Man do you guys go through those ruts with your kiddos where they just aren’t digging what’s for dinner?  It drives me insane…especially since I’ve taken the time and effort to cook them a meal that, in my opinion, there is no reason not to like.

While both of my kids are typically always willing to try something new, that’s never a guarantee that a meal is going to be a success.  They both have such different quirks when it comes to eating.  Georgia…she’s just a nut.  She’s the girl that could eat most steamed vegetables for every meal of every day.  Put steamed green beans, broccoli or cauliflower tossed in a bit of butter in front of her and it’s always a sure thing….   and sprinkle on a little cheese and she will eat any human under the table.  But what I’ve learned about her is she is a texture girl.  She doesn’t love foods with different textures mixed together like in casseroles or soups.  And too much sauce on anything totally grosses her out.  Explain that one to me, the sauce/condiment-obsessed gal.

And then theres Jude.  I mean who really knows with him.  Everyday I get something different…and I think thats pretty typical of his age.  One day he absolutely loves a dish, the next he can’t get past the first bite and refuses to eat any more.  Picking my battles over here.

But this chicken has absolutely never failed me with either child.  It’s nothing fancy…actually…it’s just the opposite.  But it’s easy…and my kids absolutely love it…and, actually, Nick and I do, too…so you better believe it’s going to stay in the rotation until they change their minds. Simple Roasted Butternut Squash Soup

Heres the deal, you guys.  I’m going to be frank with you.  I am getting lazy.  Like LAAAAZZZZYYYY.  Yes, you can still count on me to get a decent dinner on the table most nights…but man, I’ll find a shortcut.  Now don’t get me wrong..I love a good Sunday spent in the kitchen…but these weeknights are all about saving time.

I feel like life has progressively taken me to this place of minimal effort.  And yes, the weather these days must have something to  do with it, too.  But it used to be, you know, pre-kids, I was putting hours into dinner.  Hours.  Meticulously dicing, pureeing, grinding, whatever it took to make the food absolutely delicious.  Then one kid…two kids..came along and it has gradually shifted from hours of effort to literally strategizing how I can get this meal on the table as quickly as possible.  What shortcuts can I take that wont sacrifice taste?  How can I make this easier, not only for myself, but for you, my NP people…because Lord knows you don’t have the time either, friends.   Continue reading

Quick-Chili Loaded Baked Potatoes

You guys, this weather we are having around here!  It’s COLD!  Gorgeous, but man does that change in temp feel like a chill or what?  It’s pretty much the best kind of weather.  You know, the kind of weather where it’s not too cold to sleep with your windows open…but them when you wake up in the morning you can’t possibly seem to peel yourself out of those perfectly warm, cozy covers because your room has an insane chill going through it.

We have been comfort-fooding around here like crazy people lately.  It must be the weather.  And these Quick-Chili Loaded Baked Potatoes made the roster.  I feel like I say this a lot, mostly because I only tend to share the recipes that get my family’s stamp of approval, but these are definitely a favorite among the kiddos. Potato Gratin with Poblanos, Pancetta and Corn

SONY DSCHow about this weather, friends?  It’s so random this time of year.  Mornings feel like fall at its finest:  cool, crisp air perfect for that cozy sweater.  Head into afternoon and the sun is blazing and the temps are rising forcing you to tear that sweater off as quickly as you can.  Part summer, part fall, no?

And this gratin is right there with the weather these days.  Part summer with those farm fresh poblanos, potatoes and corn.  Part fall with that comfort an warmth.

Guys, you know I love a good Asian dish.  And you know that my husband is a bit meh about that whole deal-he’s an Italian food junkie.  But these salmon and rice bowls?  His fave.   Totally worthy of your meal rotation, promise!

The coconut rice is a total winner around our home.. .my kids adore it and it pairs wonderfully with basically any protein.  So I started these bowls with a base of that sweet, perfectly cooked rice.   Continue reading

Pan Roasted Chicken Thighs with Chive Cream Sauce

img_6592Boy oh boy it’s been a while.  How was your long weekend?  As I told you last time we chatted, we took a little road trip to visit my family down in Iowa and Nebraska and I couldn’t have asked for a better way to close out the summer.  It was time so well spent…with my parents, my siblings and their families.  Late nights, early mornings, donuts, happy kiddo giggles, mama’s homecooking, pool parties, coffee, pedicures…I mean it was just plain wonderful.  And now…school begins!  What a way to head into a new year, hearts full as all get out.

And as you may know, somehow, magically, each year as summer begins to slip away my seasonal cooking-brain goes right with it.  It’s incredible how it happens so organically.  Suddenly I begin craving warm food….my tummy just begins to tire a bit of all of the cool, crisp, fresh fare.  So this dish right here is just a lovely way to begin the transition….it’s warm and comforting, yet still light and fresh.
