Cheesy Mexican Zucchini Boats

Truth:  my family has about had it with zucchini, I am afraid.  As promised, I am dedicating this entire week on the blog to zucchini-because man, it’s everywhere and it’s just got to be utilized.  So, as one would assume, I have been testing zucchini recipes left and right in my kitchen for the last couple of weeks.  Some failed miserably, some were just mediocre, and some wowed us and actually convinced me that my children like zucchini; these Cheesy Mexican Zucchini boats were one of those.

I shared the recipe on KARE11 a couple of days ago and it was such a great time.  I always love spending afternoons around there-the people are just so darn friendly, the work space is so far beyond most local TV station kitchens, and it’s a total excuse for me to get out and ‘work’ outside of my own kitchen; so fun!  Click here to see the video if you didn’t catch it. Pasta + Zucchini Carbonara

I’ve assumed for a very long time that everyone makes Pasta Carbonara.  Without a recipe, just by use of memory and repetition. Butter, Lime + Parmesan Corn

Happy official summer, friends! It’s a much anticipated time here in Minnesota and man can we embrace it. Lakes for days. Warmth. Homegrown produce. BBQs. Patios. Late bedtimes. Smores over a bonfire. Sandy shoes. And CORN.

Let’s just get something straight, for starters.  I love Minnesota.  Living here is perfect for myself and my family.  But I am a gosh darn Iowa girl..and proud of it.  18 wonderful years of my life were spent in Iowa and aside from Hawkeye football…and pork…and so many other fabulous things….that place reigns supreme for homegrown corn.  There’s just nothing like it.  We ate it so often in the summers…and there were always farmers selling it out of the back of their trucks along the sides of the roads.  Hows that for fresh? Spicy Pickled Radishes

So my guess is that we’ve all experienced pickled veggies of some sort, whether from a food truck putting out stellar street food or topped on an entree at an upscale restaurant. I heart pickled ANYTHING. Zingy is just simply the perfect compliment to so many dishes.

One-Pot Southwest Chicken and Rice

Far, far, FAR too often I end up with boneless, skinless chicken breasts in my fridge with no plan in sight.  Then, what happens is I avoid them…like the plague.  They sort of bore me and man is it easy to fall into ruts of grilling or pasta-ing them.  No clue why I continue to put them in my cart at the beginning of the week but I do…likely because they force me to get creative.  So the end of the week comes and all I’ve got left in the fridge is those poor little chick-a-dees and a bunch of randomness in the veggie drawer, freezer and pantry to work with.  Continue reading

Grilled Sweet Potatoes with Garlic Lime Sour Cream

It’s funny.  Sunday, in my brain, is supposed to be for ‘Sunday Meals’.  You know, the fancy, time-consuming meals you can’t get accomplished during the week.  But rarely does it end up being that way around here.  Sunday is typically the day I go out during nap time and get my meal plan/shopping done for the week.  It sounds silly, but that little mission takes time,  so I am always rushing back home to get dinner on the table before it’s too late.  Sunday dinners usually need to be low maintenance and ultra quick for me.  And often times that means firing up the grill to throw steak or fish on and often times it’s paired with these Grilled Sweet Potato Wedges.  Insanely quick.   Continue reading
