Wow, we haven’t chatted for a while, friends. My deepest apologies. We left for a little family reunion late last week and I had every intention of touching base with you while we were on the road. But, you know. A couple of kids, 2 hours of rush hour traffic followed by a 3.5 hour road trip sort of got the best of me. So my guess is that we’ve all experienced pickled veggies of some sort, whether from a food truck putting out stellar street food or topped on an entree at an upscale restaurant. I heart pickled ANYTHING. Zingy is just simply the perfect compliment to so many dishes.

It’s funny. Sunday, in my brain, is supposed to be for ‘Sunday Meals’. You know, the fancy, time-consuming meals you can’t get accomplished during the week. But rarely does it end up being that way around here. Sunday is typically the day I go out during nap time and get my meal plan/shopping done for the week. It sounds silly, but that little mission takes time, so I am always rushing back home to get dinner on the table before it’s too late. Sunday dinners usually need to be low maintenance and ultra quick for me. Right here we’ve got a bunch of my favorite flavors all muddled into one fabulous, stand-out meal. The tiny bit of peanut butter in the marinade takes the flavor of this juicy, smokey chicken straight over the top….the pineapple adds the perfect hint of sweet acid and the coconut rice just simply turns this number into a home run. So yum.
