Cheesy Mexican Zucchini Boats

Truth:  my family has about had it with zucchini, I am afraid.  As promised, I am dedicating this entire week on the blog to zucchini-because man, it’s everywhere and it’s just got to be utilized.  So, as one would assume, I have been testing zucchini recipes left and right in my kitchen for the last couple of weeks.  Some failed miserably, some were just mediocre, and some wowed us and actually convinced me that my children like zucchini; these Cheesy Mexican Zucchini boats were one of those.

I shared the recipe on KARE11 a couple of days ago and it was such a great time.  I always love spending afternoons around there-the people are just so darn friendly, the work space is so far beyond most local TV station kitchens, and it’s a total excuse for me to get out and ‘work’ outside of my own kitchen; so fun!  Click here to see the video if you didn’t catch it. Non-MN friends.  The Juicy Lucy.  Thoughts?  Have you been blessed enough to experience such amazingness?  If you aren’t familiar I’ll give you the lowdown.  It’s a burger thats filled with cheese on the inside.  And a burger thats been owned and treasured by the Twin Cities for as long as I can recall.  You’ve got legendary places like this that have absolutely hit the nail on the head with showing folks how a classic Juicy Lucy is done.  And then there’s spots like this that take the concept of the Juicy Lucy and run with it.  The stuffed cheese is accompanied by things like bacon, caramelized onions, pepperoni, sauces of all sorts, peppers…the list could go on. Slow Cooker Reuben Melts

When I first moved up to Minneapolis I waited tables at this place.  There was a reuben on the menu that they were sort of known for at the time.  But it wasn’t like any other reuben I’d ever had.  The corned beef was braised.  So the results were not a slice of dry beef, but the most tender, pull-apart, juicy bliss.   It was basically like a love child between a pot roast and a corned beef brisket.

Fast forward about a bajillion years and here I was, just this past weekend, standing among a St Patricks Day haven at the local market:  a giant cooler full of corned beef briskets.  Score!  Totally trying this reuben thing at home.   Continue reading

Roasted Spaghetti Squash Pie

Spaghetti Pie.  My guess it’s graced your family’s table in some way, shape or form.  Think baked ziti, with spaghetti noodles.  It’s casserole-ish.  Hot dish-ish, to my Minnesotan friends.  It’s comforting, rich, gooey and just plain welcomed in my home.

Slow Cooker Beef and Bean Chili

My husband was craving chili big time last week.  And chili is one of those weird things I have a hard time making on any day of the week other than Sunday.  It’s a Sunday food, no?  It needs time to simmer on the stove and smell the house up beautifully while everyone gets cozy and football is blaring in the background.

But last week on Sunday I had an event to attend.  Which meant no time to let that chili bask in its glory on the stove.  So I decided to try a stab at it in the slow cooker. Results?  Delicious.  So simple.  And perfect for days where time has got the best of you. Continue reading
