Slow-Cooked Barbacoa Beef

This is one of those staples we all need for busy nights, guys! Get it going in the slow cooker in the morning and by dinner time you’re left with tender, savory, perfectly seasoned shredded beef that is just waiting to be devoured! Honestly, it’s giving Chipotle a solid run for their money:)

Use it for salads, tacos, nachos, burritos, or our favorite: piled high on a tostada with queso fresco, pickled red onion, hot sauce and guacamole. So stinking yum!

Also sharing the super simple way we make pickled red onion over on my instagram stories today…so come follow along! You can find us @nourishedpeach

Slow Cooked Barbacoa Beef

Ingredients

2 Tablespoons Olive Oil

1 Beef Chuck Roast (approx 2.5-3 lbs)

1/2 Cup Vegetable Stock

2 Teaspoons Chili Powder

2 Teaspoons Smoked Paprika

2 Teaspoons Cumin

2 Teaspoons Kosher Salt

3/4 Teaspoon Black Pepper

1 Large White Onion, peeled and halved

3 Garlic Cloves, peeled and smashed

Directions

Preheat a large skillet or Dutch oven over medium high heat. Add the oil to coat the pan and add your beef. Cook for 2-3 minutes or until a nice golden brown crust forms. Flip the beef and cook for an additional 2-3 minutes.

Transfer beef roast to the bowl of a slow cooker and pour the vegetable stock over the top. Sprinkle the beef with chili powder, paprika, cumin, salt and pepper. Break the onion pieces apart and lay them on top of the roast along with the garlic. Cover and cook on low for approximately 8 hours or on high for about 5 hours, or until Beef is tender and easily shredded with a fork. Remove beef from the slow cooker and shred with two forks. Discard the garlic and onion and reserve the juices for pouring on the beef as needed for moisture.

Waverunner Chicken with Citrus Salsa and Coconut Brown Rice

SONY DSCI don’t even know where to begin, you guys.  I made this dish a while back and I am literally about ready to jump through the screen in an attempt to devour these photos because I want to eat this again immediately.  Incredible.  Just incredible.

Now let’s just start from the beginning, okay?  Urban Halo…yes?  No?  If you haven’t…you are welcome for the introduction, and I apologize for your addiction all at the same time.  I’ve been a fan of this company and their headbands for a solid couple of years and for so many valid reasons…it’s local, started by a fellow mama like myself who was looking to create the most stylish, functional headbands on the planet and I’m pretty sure she has accomplished her mission.  These are my gym bff (and they don’t slip!!!)..and they are cute and comfy enough to keep on all day long after my workout.  Also, pretty much my saving grace on those rush-out-the-door mornings with no time to do my hair.  Not to mention Georgia is also obsessed..and man do they look cute on a silly little five year old, too.  So fun to share my stash with her! A Wonderful, New Opportunity

Friends, new things are on the horizon, and I just couldn’t wait to share what’s happening with you any longer.  How long have we been together now?  Some of us for almost four years, no? Can you believe that?  Let me just say that your support has made so many opportunities possible for me and I feel beyond grateful for that.  And I’m so excited to share the latest of those opportunities, one that is already so near and dear to my heart.

As you likely know by now, I am all about the 80/20 rule.  80% of the time I strive to keep myself and my family living a healthful, nourishing life.  And that leaves 20% to just simply “do what feels good or right”.  Some of you may not agree with this mentality, but it is most definitely what works for me and helps me keep things manageable and achievable in everyday life.  You already know we eat this way; we fill our everyday diets with mostly good but indulging a little is totally acceptable.  Continue reading

Sweet, Salty, Antioxidant Rich Snack Mix + Thanksgiving Meal Inspiration

SONY DSC

I planned on just leaving you with a bit of Thanksgiving meal inspiration today.  I did.  But it felt wrong, you know, not sharing a new recipe and all.  It felt like going to a dinner party empty handed.  No dish to share, no bottle of wine or even fresh flowers.  It felt icky.  So it’s not going to happen.  This snack mix is your hostess gift.  I hope you like it 😉 Continue reading
