Here is just the perfect way to utilize that Pickled Purple Cabbage we chatted about in the last post. My goodness we are loving these tacos lately. The textures, the freshness, the brightness. Such a fun way to switch up your Taco Tuesdays!
In true street taco form, lets just go ahead and pile in all of the goods and get right to it, friends. The most savory chili-lime chicken + cool, smooth avocado + tangy, lip-puckering purple cabbage get a bajillion stamps of approval from this gal. But really, if you reeeeaaaalllyy want to hit next level, top it all with a drizzle of sriracha mayo. Goodnight. Sleep tight. I’ll have 14, please.

Chili Lime Street Tacos
Family Serving Notes: Letting the kiddos make their own tacos and choose their toppings always makes for a happy meal-time. I simply lay out the ingredients (I also add shredded cheese to the line up per the kids request) and let everyone build their own.
2 Tablespoons Olive Oil
1 Pound Boneless Skinless Chicken Breasts, halved lengthwise
1 Tablespoon Chili Powder
1 Teaspoon Kosher Salt
1 Lime, halved
1/4 Cup Mayonnaise
1 Tablespoon Sriracha
Sliced Avocado, for topping
Cherry Tomatoes, halved, for topping
Chopped Cilantro, for topping
Preheat oven to 400. Season all sides of the chicken with chili powder and salt and heat olive oil in an oven-safe skillet over medium high heat. Add chicken and cook for 3-4 minutes, or until a nice golden-brown crust has formed on the one side. Flip chicken and transfer pan to the oven. Cook for 20 minutes or until chicken is fully cooked through. Remove chicken, squeeze lime over the top and let rest for 5-10 minutes; slice into bite- sized pieces.
While chicken is cooking, whisk mayonnaise and sriracha together in a small bowl; set aside or make ahead and refrigerate for up to 4 days.
Next, build your tacos. In a corn tortilla pile in chicken, pickled cabbage, avocado, cherry tomatoes and cilantro and top with sriracha mayonnaise.
